Turkish food is generally a lot more same-y in comparison to American food. Like you aren’t going to find any Italian-Thai fusion or northwest regional Brazilian restaurants. What the Turks lack in diversity though, they make up for in quality. There are regional Turkish flavors but those variations are a lot more subtle than what is common in America.

In general, Turkish food is very much NOT spicy. They will say that an adana kebab is spicy and an urfa kebab is medium but both would probably be considered mild in the States. Occasionally you will find a spicy lahmacun (lah-ma-JUNE) but they are the exception rather than the rule. Those places are probably more arab or kurdish than turkish.
